    Tonight for a vegan, whole foods meal I made a caramelized leek, onion, and potato "gratin," and it was yum!

    Often there are many ways to repurpose something you already have to achieve whatever it is you need instead of buying a new item for the job. This requires creativity to fit your needs and simplicity to get by with homemade alternatives instead of going out for the newest, trendiest version. But keeping it creative and simple can save you money!

    I love the sensory experience of walking versus driving - birds chirping, breezes blowing, the warmth of the sun - makes you take stock and appreciate where you are.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?

    Richer countries are able to produce more meat, but it is unsustainable for our planet (methane, deforestation, etc.) and health (heart disease, obesity, etc).

    Yes! I'd rather pay a little more for better quality food now than drown in medical bills in the future for eating too much crap.
