    Food Try a New Way to Prep
    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA. What are some foods that you would like to preserve and enjoy later in the year?

    Peppers. We pickled peppers for the first time and they have turned out great! Spicy, but great. I definitely want to continue pickling and saving produce that we are able to grow in our backyard.

    Waste Carry my Trash
    What one thing could you do right away to reduce your waste?

    Bring clothe towels and napkins to work. Everything here is paper towels. To reduce my footprint, I should start packing napkins and hand towels to use here throughout the day.

    (I ended up doing this challenge while I am completing the "Trash Audit" challenge. Since my goal was to do the "Trash Audit" throughout the whole EcoChallenge, I figured I might as well get points for carting it to and from work each day.)

    Water 5-Minute Showers
    Five minute showers are an impressive step toward reducing your water footprint. What is the next step you can take?

    I tried to take this challenge one step further. Recently, I played around with turning on and off the water during the showers. Essentially, I am running the water only when I need to rinse off. This drastically reduces the amount of time you are running the water.

    For example, tonight my shower was 4 min 34 sec. However, the water was running for only 2 min 48 sec.

    Remarkably, I still feel clean after the shower. However, one does have to get over the "cold factor" of being damp without water running. Small price to pay. Alternatively, we could all take bucket showers.

    Another potential way to reduce our water footprint is to watch what we eat. For example, much of the meat we consume is incredibly "water intensive" (see image below). Finding other sources of protein (e.g., beans or "impossible" meat) is a great way to reduce our water footprint. I want to say that the Impossible Meat uses 99.9% less water than it takes to create a regular burger patty [heard that on a podcast - Science Friday - but citation needed]. And, honestly, the Impossible taste is better than many burgers that I have had.

    Waste Compost Food Waste
    New to composting? Be sure to check out the action resource links to learn tips and more about it. As you transition from throwing food away to composting, what do you notice about how much you are tossing? How will you use your compost once it is ready?

    In fact, I am new to composting. Thankfully, the home we just bought has the beginning of a compost pile in the backyard, so I have been able to use that. But, I acknowledge that I should do some more research on best practices. 

    Also, ever since we began composting in Portland (via city compost), our trash output has plummeted. It was startling actually. (Side note, since moving to IL, I have noticed more packaging (especially, "to-go" restaurant containers) make their way into our garbage - time to fix that!) In the spring, I am excited to use the compost to provide nutrients to the backyard's boxplots and/or flower beds. So much to learn and try!

    Also, so that others can keep me accountable, I will be composing my trash audit on the following Google Sheet. This sheet will keep a running log of all my trash.

    In addition, I will work to post a picture at the end of the EcoChallenge of all the trash items that I could safely collect.

    Transportation Go by Bike
    How do your transportation choices affect your engagement in your community? Does your experience differ while walking, riding transit, biking, or driving?

    My transportation choice absolutely affects my engagement with the community. As I walk and/or cycle throughout  town, I am much more exposed, literally. I am not hiding, or sheltered, behind the shell of the car. This is both nerve-racking and liberating. I am much more exposed to the dangers of inattentive drivers, but I am also able to connect to my neighbors and appreciate their presence to a higher degree. (They also breathe easier due to my choice of transportation.)

      I sure wish San Antonio was bike-commuter friendly! We only ride the greenways right now.

    I have tried to do a "Personal Waste Audit" in previous competitions. However, I want to be a bit more detailed about it this time. Maybe a spreadsheet with photos? Hmm....

    Also, be on the lookout for "One Time Activities". These are often great and easy opportunities to get points and learn a lot more about environmental issues. For example, in previous competitions, Meghan and I have watched short documentaries on a myriad of topics, including Native American peoples' modern dietary issues and how communities are working to change minds/habits. Interesting stuff. Be on the lookout and I will do my best to post about them.
