Food
Whole Foods Diet
I will enjoy 2 meal(s) each day free of processed foods.
Simplicity
Eat Mindfully
I will eat all of my meals without distractions, e.g., phone, computer, TV, or newspaper.
Food
Weekly Meal Planning
I will reduce food waste and save money by prepping for 2 meal(s) each day, only buying the ingredients I need.
Waste
Skip the Straw
Plastic bags and small plastic pieces like straws are most likely to get swept into our waterways. I will keep 2 plastic straw(s) out of the landfill and ocean each day by refusing straws or using my own glass/metal straw.
Participant Feed
Reflection, encouragement, and relationship building are all important aspects of getting a new habit to stick.
Share thoughts, encourage others, and reinforce positive new habits on the Feed.
To get started, share “your why.” Why did you join the challenge and choose the actions you did?

lisset padilla 10/21/2019 10:49 AMIt has definitely been interesting to see just how more mindful I am when it comes to meal prep. Some say that it takes roughly 21 days for a habit to form and hopefully that is the case here. -
lisset padilla 10/09/2019 1:28 PMI know that this isn't part of the challenge, but my roommates and I have just started a worm bin and Im super excited!-
Michael Wzorek 10/22/2019 9:16 PMI just turned the soil of my garden and I have never been so happy to see the creepy crawlers. I support the worm bin. -
Liz Zavodsky (Ecochallenge Staff) 10/09/2019 2:48 PMVery cool!

lisset padilla 10/07/2019 11:02 AMThe challenge is going well. It has definitely been interesting to see just how mindful I truly have to be. I think that the real challenge is going to be remembering to update my posts multiple times a week.-
Barbara Willard 10/09/2019 1:17 PMIt is so true that remembering to post is hard to do. I had to go back a couple of days to update my progress. Put a note in your calendar and see if that helps.

REFLECTION QUESTIONWaste Skip the StrawHow could you incorporate other "R's" -- reduce, reuse, refuse, repair, repurpose, etc. -- into your lifestyle?
lisset padilla 10/07/2019 10:59 AMI kind of hate the sippy cup lid that most places are using now instead of the straw, so I went out and purchased a reusable straw which is fine and works perfectly fine with the reusable cup that I usually carry around.-
Barbara Willard 10/09/2019 1:18 PMThe reusable straw is even better because the sippy cup lids are all plastic. Go Lisset! -
Annamarie Pas 10/07/2019 12:13 PMHeck yeah! Way to go!

REFLECTION QUESTIONSimplicity Eat MindfullyMindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?
lisset padilla 10/07/2019 10:55 AMWithout the distractions I was way more conscience of what I was preparing and eating. The conversations I had with my roommate over dinner were way more detailed and lengthy than they usually are. -
REFLECTION QUESTIONFood Whole Foods DietMichael Pollan states that “it is better to pay the grocer (our edit: or the farmer!) than the doctor.” What are your thoughts on this idea?
lisset padilla 10/07/2019 10:52 AMI definitely think that having a good diet might lower the time and money you send at the the doctors, but at the same time you shouldn't avoid going to the doctors just because you think your healthy life style is going to prevent you from getting sick. -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
lisset padilla 10/07/2019 10:49 AMUnfortunately this really does not surprise me. I think that the money that is wasted could easily be used to make the house a bit more eco friendly. For instance it could be used to subscribe to Imperfect Produce and start a compost bin.
