    I learned that eating a waste-free, unprocessed diet is very, very difficult.  It is also very time consuming.  This is the problem, so much of fast-pace in this life is aided by time-saving devices.  But those devices and technologies have significant impact on our environment, and not for the better.  Convenience is the major culprit.  The thing to do is to think about one's lifestyle.  Why is it so fast-paced that you need to draw on convenience constantly.  I believe the answer is to prioritize one's time to be more mindful of many things, especially slowing down and taking the time to do what is right for our environment!

    Going well but I didnt prepare well enough. I need more whole foods that won't create waste. I'm going to store this weekend. I've learned prepping is important.

    I am anxious about these challenges because they require me to move away from convenience, especially with food.  While I am mostly vegan (about 80%), much of that diet is highly processed meat substitutes and packaged goods.  I'm a terrible cook and I am concerned I won't like the meals I make.  However, I want to commit to more of this.
