    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    Heading into winter, aka Soup Season, I will save vegetable ends to make veggie broth. This will decrease food waste in my household and create multiple meals from unused parts of veggies.

    I tend to grocery shop daily - which I feel can increase my food waste if my partner and I don't communicate about meals. I need to start grocery shopping for multiple meals to decrease any food waste.

    I plan to swap out exercise for the time I spend looking at a screen and taking my dog for an evening walk instead of Netflix.

    I plan to go on one hike during this challenge and walks in the park with my dog more frequently as we head into winter.
