    As this is the last day of the challenge I feel happy with the efforts I made and want to continue to make to have a greater impact on benefiting the environment. While these challenges were kind of hard at first I feel like I adjusted pretty well and it makes me feel happy doing these things because I am making an effort and want to continue to do even more.

    Tonight I carpooled with 2 of my friends to work tonight which I think we will be doing as often as possible for now on! Tonight I made skillet potatoes with red pepper and garlic cloves that I got from the farmer's market and am going to try to make it a habit to cook at least 2 vegan meals a day from now on.

    Going into the challenge I thought it would be really hard to make unprocessed meals because while I often snack on fruits and vegetables, I don't actually cook that often but I'm planning to try several things in my vegan cookbook that turn out to not be so hard. The challenge has also made me eat healthier which I am appreciating

    I went to the farmer's market this morning and got a lot of vegetables and fruits and enjoyed a taco salad and a smoothie which were both all made out of unprocessed ingredients. Mostly everything came in paper bags as well which I was excited about since I am trying hard to limit my plastic usage. I am also going to try to buy everything I can from farmer's markets now on!

    The past week I have begun carpooling with a coworker to work, bought a hydro flask to reduce my plastic water bottle usage, have taken my dog out in nature every day, and although I am already vegetarian my meals have been mostly vegan every day. I am going to the farmer's market tomorrow to get foods and ingredients that aren't processed to prepare my meals for the next week.
