Shelonda Simpson 10/23/2019 9:29 AMI have been preoccupied this week, completing the activities but not recording them. Being more mindful, yet spending more time recording/recognizing the mindfulness seems a bit hypocritical. But in the name of competition.... -
Shelonda Simpson 10/23/2019 9:27 AMThis has been fun actually, a little healthy competition, to which I have previously had an aversion to recording daily habits. However, I am thankful to be a part of such a great team! -
REFLECTION QUESTIONFood Try a New Way to PrepCanning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA. What are some foods that you would like to preserve and enjoy later in the year?
Shelonda Simpson 10/16/2019 8:33 AMHomemade bread is a lot more fun to make than pickling, but I like the taste of pickled green beans better than baked bread. I have pickled green beans, asparagus, and pickles as well as freezer jam for later in the year/early spring. -
REFLECTION QUESTIONHealth HappinessHow does/can practicing gratitude keep you centered and motivated to work for a better world?
Shelonda Simpson 10/10/2019 11:07 AMI actually had someone comment on my glow after complimenting a couple of colleagues and sending a message of gratitude and appreciation to someone else. Maybe it's good for my skin to glow? -
REFLECTION QUESTIONHealth Take ControlHow do environmental health, community health, and your personal health intersect?
Shelonda Simpson 10/07/2019 1:13 PMThe intersectionality of my health is being explored by many researchers, a fascinating topic for me. Personally, I find that environmental health in east county impacts the fewer health resources in that part of town. While I am fortunate to be able to drive across town for appointments (if necessary) my heart aches for those less fortunate, and unable to obtain the care they need, based on the zip code in which they reside. -
REFLECTION QUESTIONSimplicity Needs Vs. WantsHow is creativity necessary for practicing simplicity?
Shelonda Simpson 10/07/2019 1:11 PMThe real test for this challenge will come Thursday - when it is payday. It is easier the three days before payday ;) -
REFLECTION QUESTIONSimplicity Work-Life BalanceHow might practicing work-life balance lead to a more sustainable life for yourself? How might it contribute to sustainability more broadly?
Shelonda Simpson 10/03/2019 8:58 AMThis is hard to do, because expectations vary so much from friends and family, but I am going to do this as often as I can. -
REFLECTION QUESTIONSimplicity MeditateWhat would you like to invest more time in reflecting on?
-
REFLECTION QUESTIONSimplicity Disconnect from EmailNotice how much time you were spending checking email away from work and make note of that. Now that you have stepped away from it and have not been checking, what changes are you noticing in your thoughts, use of time, stress and energy levels?
Shelonda Simpson 10/02/2019 12:31 PMLogging out of emails on laptop and turning phone notifications off at night has helped this challenge. -
REFLECTION QUESTIONHealth Learn More about Food DesertsWhat are the implications of access to nutritious food for a community?
