    I have been preoccupied this week, completing the activities but not recording them. Being more mindful, yet spending more time recording/recognizing the mindfulness seems a bit hypocritical. But in the name of competition....

    This has been fun actually, a little healthy competition, to which I have previously had an aversion to recording daily habits. However, I am thankful to be a part of such a great team!

    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA. What are some foods that you would like to preserve and enjoy later in the year?

    Homemade bread is a lot more fun to make than pickling, but I like the taste of pickled green beans better than baked bread. I have pickled green beans, asparagus, and pickles as well as freezer jam for later in the year/early spring.

    I actually had someone comment on my glow after complimenting a couple of colleagues and sending a message of gratitude and appreciation to someone else. Maybe it's good for my skin to glow?

    The intersectionality of my health is being explored by many researchers, a fascinating topic for me. Personally, I find that environmental health in east county impacts the fewer health resources in that part of town. While I am fortunate to be able to drive across town for appointments (if necessary) my heart aches for those less fortunate, and unable to obtain the care they need, based on the zip code in which they reside.

    Notice how much time you were spending checking email away from work and make note of that. Now that you have stepped away from it and have not been checking, what changes are you noticing in your thoughts, use of time, stress and energy levels?

    Logging out of emails on laptop and turning phone notifications off at night has helped this challenge.

    Working with a farm to establish a CSA in East County
