    So far meal prepping and zero waste has been the most difficult, but also the most convenient (if that makes any sense). By meal prepping, I didn't have to worry about getting up early to make my lunch so it saved me a lot of time in the morning. By using reusable containers, I didn't have to worry about holding onto garbage! I've been reducing the amount of animal products to slowly transition to vegan. The hardest is avoiding an egg omelet for breakfast, but I found an amazing banana oatmeal pancake recipe!

      That's awesome! I find that when I meal prep I safe so much money for the week. We get tired as students and busy, so it's good to have something ready to go !

    I had Sunday and Monday off so I was able to meal prep my vegetarian meals for a few days! I actually enjoyed doing it and cooked a vegetarian dinner for my family on Sunday. They are HUGE meat eaters, but they enjoyed a vegetarian lasagna. I replaced the pasta with eggplants and made a sauce from scratch.

    I realize that it's two minutes to midnight, but a little update! I've been vegetarian for about a year now so I'm using this opportunity to (try) to go vegan. I don't have a problem with cutting out animal products except for greek yogurt and dark chocolate (love those foods)! But, I've made a plan to only eat those in the morning and every other day to slowly transition into veganism. It's not easy, but it's been going well so far!

    So I'm a little late in the game because I've been crazy busy, but nevertheless, I'm here! :) Majority of my challenges revolve around food. I'm hardly ever home so I think becoming more practical and sustainable with my meals is a good and healthy challenge. It's easy for me to run into Starbucks and grab a coffee and a spinach egg white wrap, but that's a lot of waste. I want to adjust to meal prepping, organic choices, less waste and overall healthier options. 

    I'm also one of those people who need to sleep in below freezing temperatures (as is my dad). My dad pretty much controls the thermostat, but I'm going to make it a goal to use the thermostat less and rely on natural heating and cooling.
