I meal prepped lunch portions of grapes, celery, muffins, wraps, yogurts and treats for the kids lunches and the week went much smoother and the kids got two serving of fruit and vegetables in their lunches every day.

I am proud of myself for eating more fruits and vegetables.  Last night for dinner I had the most delicious and fresh salad.  So many good vitamins for my body in that one meal!

Yesterday instead of cookies for a snack I had an apple.  For breakfast I had a banana and grapes.  With dinner I had grapes and pineapple.

An average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?

This amount of money surprises me.  I would much rather use that money to go on a vacation with my family.  We regularly have leftover night to reduce the amount of food thrown away.  I love taking leftovers to work for lunch, its so easy to just warm it up in the microwave.  It saves money and reduces food waste.  Sometimes I will use leftovers to create a new dish, like roasted chicken one day becomes chicken tacos or chicken salad sandwiches the next day.

I recently moved from CA to Utah and noticed right away the difference in recycling programs and plastic bag programs between the 2 states.  I have many of my own reusable bags and enjoy using them over the flimsy, small bags provided by the Utah retail stores.  I was surprised that Utah garbage does not provide a green waste trash can.  I am going to look into getting a green waste can to more completely sort my waste at home.  I am going to continue to use my reusable shopping bags even though I feel the grocery employees are irritated when I use them.
