Food
Reduce Animal Products
I will enjoy 1 meatless meal(s) and/or 1 vegan meal(s) each day this week.

Greg Dunbar 10/23/2019 3:50 PMWow! People are really getting creative with this challenge and there are some really high numbers. Way to go team Tualatin! I think I'm a little too late for the top 10 ut it was fun! -
Greg Dunbar 10/23/2019 3:37 PMI can't wait to see if this changes our bill and it's amazing how much cooler the LED lights are plus they last for years so we won't be filling up the landfills either. Ciao! -
REFLECTION QUESTIONNature Forage for My FoodPeople are motivated to forage for many different reasons: as a source for food, a means of income, to connect with nature, to participate in cultural tradition, transmitting specific ecological knowledge, or as a means of stewarding local and native plant populations. What is your chief motivation for foraging?
Greg Dunbar 10/23/2019 8:48 AMI do it because it's relaxing and it's a good distraction from the busy world around me. Plus there's an added bonus when you can eat naturally grown food. -
REFLECTION QUESTIONWaste Carry my TrashWhat one thing could you do right away to reduce your waste?
Greg Dunbar 10/23/2019 8:36 AMAvoid food wrapped in plastic, bring your own bag when shopping, shop local, buy things in bulk, avoid single use items/especially food, use your own reusable bottle, recycle and reuse food jars for storage and refills, grow your own food, learn to cook and make your own meals. -
REFLECTION QUESTIONHealth Take ControlHow do environmental health, community health, and your personal health intersect?
Greg Dunbar 10/23/2019 8:25 AMThe environment can affect human health as can promoting human health can also affect the environment...improvements in human health, such s reduced mortality and decreased disease and hunger, can cause environmental harm, such as increased use of fossil fuels, deforestation, pollution and decrease overall biodiversity. -
Greg Dunbar 10/23/2019 8:05 AMA little late but I finally figured out how this challenge works thanks to my teammate for showing me the ropes...it's been an interesting and eye opening event...thank you! -
REFLECTION QUESTIONFood Try a New Way to PrepCanning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA. What are some foods that you would like to preserve and enjoy later in the year?
Greg Dunbar 10/22/2019 5:32 PMWe did chiles this year and blueberries...it's nice becuase we'll have fresh tasting treats through the whole winter months. Next year we plan to do even more canning and I would like to pickle a variety difference items. -
REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Greg Dunbar 10/22/2019 5:29 PMSoups, drinks and roasting or baking all good ways to use the whole plant...We recently made chicken vegetable soup using the whole veggies and it was delicious! -
REFLECTION QUESTIONSimplicity Needs Vs. WantsHow is creativity necessary for practicing simplicity?
Greg Dunbar 10/22/2019 5:23 PMSimplicity actually drives creativity...I recently read...simplicity is almost always best because, when focusing on simplicity, your creative work becomes easier to understand, easier to recognize, easier to use (if it requires usage), easier to expand upon (if necessary), and downright easier to create. Simply put: simplicity makes things easy. I love it!! -
REFLECTION QUESTIONSimplicity MeditateWhat would you like to invest more time in reflecting on?
Greg Dunbar 10/22/2019 5:08 PMI would like to spend more time reflecting on the world around me and what I can directy control.
